It’s time to share one of my favorite Peruvian Recipes! Have you ever seen corn that is purple? Have you ever heard of “Chicha Morada” or “Purple Corn Juice”?
Peru is known for the many different kind of corn it produces. Purple corn is one of them. It is well known for its antioxidants properties as well as its flavor. Chicha morada is a traditional drink, if you ever visit Peru, you will see it everywhere! And if you are lucky enough to find a store that carries Peruvian products, don’t miss out on the opportunity to make this delicious drink.
Chicha Morada Recipe
Wash and peel the pineapple, save the peel and core as well as some pineapple chunks. Wash the purple corn, too. In a big pot add water, purple corn, pineapple peels, core and chunks, three cloves, a few cinnamon sticks. Let it boil until the water turns purple, usually for an hour or so. FYI: Your whole house will smell amazing while you are making this!
Once it has boiled, let it cool down. Drain it using a strainer. Only prepare what you are ready to drink for the day. Use sugar and key lime juice to season it. Dice the apples and add them to the pitcher.
Keep it in the fridge and drink it cold
